Roasted Beet Slices
When I go grocery shopping, I make myself pick at least one ingredient that either I have never used, or very rarely use. The last time I went to the store, I came home with beets! I’ve only used beets a few times in my life; so today, I had some fun while prepping dinner. The last time I cooked beets, I made roasted beets, but I cut them as large dice. This time I decided to try something a little different.

Before I get to the fun recipe, you should first know the benefits of eating beets.
- It’ll make you pee red!
- Ok, that one isn’t really a benefit, and can even be a little freaky if you don’t remember you had eaten beets the day before! That one is more just a fun fact.

- Reduces the risk of heart disease
- Increases stamina
- Promotes liver detoxification
- Improves brain health
- Helps you poop better!
And that’s just a small list of some of the amazing benefits!
Preparation Time
Ok, facts over, time to get back to the excitement of cooking delicious beets!
I’ll be honest, there isn’t much to say about this recipe. It has very few ingredients and takes little effort. But does it make it that much better? It is something you can whip together about 20-30 minutes before dinner! Need it to take less time? Just slice the beets even thinner and they’ll take less time to bake.
Tonight I baked these up and served them with pork chops smothered in a mushroom sauce and a salad. Will’s dad was not very crazy about the idea of eating roasted beets. He kept saying he doesn’t like beets. So when he dished himself some beets, he started with just a few slices. However, after he tried a slice, he scooped out another spoonful! If that man willingly eats them, then I know it’s a good recipe!
One last note before moving on to the recipe. If you have chickens or have a friend with chickens, give them the stalks and peelings from the beets! They’ll eat these up. Plus, you won’t be wasting anything!
Just don’t be shocked if they poop red the next day!

- 1-2 tbsp olive oil
- 1 pinch salt
- 1-2 pinch ground black pepper
- 1 tsp dried rosemary
- 1 tbsp honey
- 3 beets sliced 1/4" thick
Ingredients

- Preheat the oven to 375°F.
- Toss the sliced beets with the oil, honey, salt, pepper, and rosemary until well coated.
- Lay them out in a single layer on a baking sheet.
- Bake for 15 minutes or longer to obtain the desired texture.
