Ingredients

Gutted and cleaned

oil

small onion
Sliced

bacon
Cooked and broken into pieces

bacon grease
Instructions
Preheat the oven to 425°F.
In a small bowl, mix the brown mustard, thyme, salt, pepper, lemon juice, liquid smoke, and garlic powder together. Set aside.
Sauté the onion in a little bacon grease over medium-low heat until soft.
Mix the onion and bacon together in a small bowl, then set aside.
Lay the trout out and spoon the mustard mixture inside the trout. Spread evenly over all the flesh.
Spoon the onion/bacon mixture into the fix.
Brush oil on both sides of the fish and place on a sheet pan lined with a silicone mat. Bake for 20-25 minutes or until meat is flaky.
